View Full Version : Pumpkin muffin recipe

As promised to LoopyLu :)

Pumpkin Muffins (makes around 14)

4oz (120g) margarine or butter, at room temperature
5oz (150g) brown sugar
4tbsp golden syrup
1 egg, at room temperature, beaten
8oz (225g) pumpkin*
8oz (225g) plain flour
1/4tsp salt
1tsp bicarbonate of soda
1 1/2tsp ground cinnamon
1tsp ground nutmeg
1oz (30g) sultanas or raisins

1. Preheat oven to gas mark 6 (400F / 200C) & line a muffin tray with paper cases.

2. With an electric mixer, cream the butter/margarine until soft. Add the sugar & golden syrup and beat until light and fluffy.

3. Add the egg and pumpkin and stir until well blended.

4. Sift over the flour, salt, bicarbonate of soda, cinnamon and nutmeg. Fold just enough to blend but do not overmix.

5. Fold in the sultanas or raisins.

6. Spoon the mixture into the paper cases, filling them 3/4 full.

7. Bake until the tops spring back when touched lightly, approx. 12-15 minutes. Serve warm or cold.


* it says cooked, but I find that if you've scraped it out of the pumpkin when carving one it's fine enough to not need pre-cooking.

I know you have got yours done Leah but this was posted on facebook if anyone else wants ideas for carving pumpkins.

I've made them every year since about 2004, and they've always worked for me :)
