Hey you guys- I was making lunch- a salad with artichokes.... I didn’t realize the artichokes had been opened for..... 2 months....usually you want to
Keep No longer than 2-3 days.... I Put one in my mouth and immediately spit it out- it was super sour....

I swallowed nothing- rinsed my mouth out, brushed my teeth twice, and used mouth wash.. twice.... do I need to worry I could get sick? Especially botulism as these were jarred? I know that one is especially dangerous!

no need to worry at all... worst that will happen is you have a bit of a queasy tummy. but you won't as you didn't eat anything

Botulism can only grow in an airtight environment, so if it was there it would have been there when you first opened them (since you didn't get sick 2-3 months ago, you're fine now) Someone who works in food safety once told me that spoilage bacteria, while gross, is usually not harmful. It's the nasties like e. coli and the like that typically make people sick.
