Hi All:D
After a chat tonight in chat I said I would start a post on cheap but healthy meals on a budget.....I will start but everyone else feel free to join in!!!!
Ok cheap lasagne
1 pack lasagne sheets
2 cans chopped toms
2 onions
1 tube tomato puree
Pint milk
Cornflour
Grated cheese
Mustard
Put toms onions bit of water and tom puree in pan and heat
Milk in micro till hot
Mix 3 heaped pudding spoons cornflour with water and whisk into hot milk
Add cheese and mustard
When thick remove
Layer lasagne sheets tomato mix in layers
Top with cheese sauce
Bung in low oven for an hour
Job done!!!!

Fishcakes
Can tuna
Mashed spuds
An egg
Spring onions if funds permit
Oil
Boil and mash spuds
Add fish and finely diced spring onions
Add egg
Mush together and heat oil in pan
Form mix into cakes fry till golden
Job done!!!!

Pack sausages
Pack salami
2 tins baked beans in tom sauce
1 tin chopped toms
Couple of chopped onions
Fry sausages till brown put in casserole dish or slow cooker
Add onions beans toms and salami
Cook in low oven for an hour or slow cooker for several
Can add apples and a pepper if funds allow
Right more tomm please add if you have any

CHEESY TUNA FISH
2 cans tuna
1 can condensed soup pref mushroom
mashed spuds
cheese
ok mix tuna and soup together...dont dilute soup use it condensed
put in dish(like sheperds pie)
top with mash
grate cheese over the top
bung in med oven till golden

Hi all,
This was always one of my favourite recipes:
I can corned beef
mashed potatoes (probably about 4 servings
2 - 3 tablespoons bbq sauce
handful of grated cheese
Smash the corned beef with a fork into a bowl. Add mashed potatoes and bbq. Mix well. Sprinkle grated cheese on top. Put under the grill until the cheese bubbles and browns slightly.

Puy Lentil Soup
6 oz puy lentils (no need to soak)
1 large onion
2 cloves garlic
1 teaspoon mixed dried herbs
1 teaspoon thyme
1 bay leaf
1 teaspoon sugar
1 can chopped tomatoes
2 pts vegetable stock (can be made from stock cube)
Chop onion and gently soften in a little olive oil
Add chopped garlic and gently fry with onion
Add all other ingredients
Put lid on saucepan and gently simmer for 1 hour
Remove bay leaf and blend - add salt and pepper to season as required.
I usually cook this in my slow cooker, which is even less hassle. Just put all the ingredients in, no need to soften onions first, and cook on low heat for about 5 hours before blending with additional seasoning if required.
Served with a brown roll this makes a really wholesome meal for 4.:)
chicken currry/
left over chicken from sunday lunch
a chopped onion
1 1/2 tablespoons of curry powder
chicken stock cube
milk.
rice
add oil to pan
chop the onion and fry til soft
add stock cube to 150ml of boiling water
fry curry powder for a few seconds
add stock slowly and stir
add 250mls of milk
add chicken
simmer for 20 mins
then cook rice for another 12 mins.
if sauce is a bit thin i add some cornflour mixed in a tiny bit of water.
Corned Beef Pie.
Mashed potato - enough to serve 3 to 4 people.
2 medium onions.
2 meduim carrots.
1 tin of corned beef.
Boil and mash potato as usual with milk and butter and leave to cool.
Boil and roughly mash carrots and leave to cool.
Finely chop onions and fry gently until opaque and softened without colouring.
Chop corned beef into to chunks and mix with all other ingredients. Its up to you how chunky you leave the beef. Some people like it in chunks, others like it well mashed. Season with plenty of pepper.
Make a quantity of short crust pastry, enough to make 2 8" pies. Cover bottom of pie pate with pastry, spoon on half the mixture, wet the edge of the pastry with water then put top layer of pastry on, pressing down edges to seal. Make a hole in middle to allow steam to escape. Brush with beaten egg or milk and bake at 150 degrees for about 30 minutes. Repeat process for other pie, cool then freeze for another day.
Enjoy!
I serve with chips and thick gravy or a mix of seasonal vegetables.

TOAD IN THE HOLE
8 SAUSAGES
2 EGGS
2 PACKS BATTER MIX(TESCO VALUE 8P PER PACK)
2 CHOPPED ONIONS
OIL
PUT SAUSAGES AND ONIONS IN LARGE ROASTING TIN/DISH
COOK IN OVEN FOR 10 MINS
ADD A LAYER OF OIL PUT BACK INTO OVEN ON TEMP ON BATTER MIX PACK
MIX UP BATTER AS INSTRUCTIONS ON PACK
POUR BATTER INTO DISH ROUND SAUSAGES
COOK UNTIL RISEN AND GOLDEN
EASILY SERVES 4 WITH SOME VEG AND GRAVY

Put 2 slices of bread in toaster.
Heat baked beans for 2 mins in microwave.
Spread toasted bread with organic spread.
Place toasted bread on a very expensive looking plate and then gently pour on baked beans.
Get out the most expensive cutlery you have.
Then serve on a tray with pepper and brown sauce.
Cant beat beans on toast if served the correct way.

Very quick and easy one here, egg and chips, yummy!

saw this post and thought i'd add something to it .....
Fusilli Pasta (depending on how many you are cooking for )
1 Red Pepper
Small Garlic Clove
Tin of Chopped Tomatoes
Mushrooms
Couple Of Slices of Bacon (optional)
Red Onion
Chop the pepper,onion,mushrooms,bacon and crush the garlic.
Cook in a hot frying pan.
Cook the pasta
At the end of the pasta cooking add the tomato's
chuck it all together
Grate some cheese over the top and grill until the cheese is melted
Bung in a dish and ENJOY !!!!!!!!
PORK BURGERS
Pack minced pork
Plenty fresh breadcrumbs(stale bread in blender and whizz)
1 Lemon
1 Egg
Salt and pepper
Put pork in large bowl
Add breadcrumbs, egg, juice,and grated rind of lemon,salt and pepper
Mush it all together with clean hands
Form into burgers
Place on oiled baking tray and cook in med oven till golden brown and juices run clear
Serve in rolls with salad if liked

STUFFED MARROW
1 large marrow peeled and cut into rounds about inch and a half thick
Small pack minced beef
pack sage and onion stuffing
1 apple grated
1 egg
PLACE BEEF APPLE AND EGG IN A BOWL
MIX UP STUFFING AS PACK INSTRUCTIONS
COMBINE WITH BEEF MIX
SCOOP OUT MIDDLES OF MARROW SLICES
FILL WITH BEEF MIX
COOK IN MED OVEN TILL MARROW IS SOFT AND MEAT COOKED THRU

1 Boston Butt Pork Roast
1 Bottle Favorite BBQ Sauce
1 Can of Coca Cola
Put all of the above in your Crock Pot and cook on low for 8 hours. Take the roast out of the pot and put in big bowl and shred with two forks. Serve for dinner or put on buns for sandwiches. May use some of the sauce for extra flavor. The coke absorbs the fat! Also freezes well too.
