I posted a thread suggesting a recipes section on this board. There are a couple of threads with recipes and I thought it would be beneficial to gather them together.
My thought is to post "Healthy Eating Recipes". Since many suffer from digestive issues and food sensitivity, it makes sense that proper nutrition and leaning toward low fat, salt etc. type meals and foods would help sufferers (less symtoms = less anxiety). Since I have heart disease and have had cancer, my wife and I cook and eat very healthy foods with the freshest ingredients we can get.
I'll start with one I make that's very simple, fast, healthy and delicious.
Homemade Hummus.
2lbs cooked garbanzo beans (you can cook your own or use the "low sodium" canned beans (2 - 15oz cans)
1/4 cup of raw sesame seeds
1/4 cup fresh squeezed lemon juice
1 clove fresh garlic
1 teaspoon of cumin
1 tablespoon of extra virgin olive oil
1/3 cup of water or use the liquid from one can of garbanzos
Combine all ingredients into a good blender or food processor (we use a Vitamix). Blend until smooth.
Season to taste (I don't use salt). We find the "Mrs. Dash" brand of seasonings good, especially the garlic and spicy mixes. You can use roasted red peppers, diced avocado or tomatoes etc. as a garnish as well.
Serve with low sodium crackers or fresh raw veggies (celery, carrots, broccoli, etc.
