How long can peeled potatoes be left at room temperature?

I didn't know where to put this is this isn't really an anxious thing just I can't cook thing

Peeled them about 17:00 put them in a pan of water and started boiling them about 19:18,

Look fine, no grey or pink so the enzymes haven't been compromised but wanted to double check in case I make my little brother feel ill cause i'll never hear the end of it

Quiet safe to be honest peal spuds the night before leave them in water in a pan then cook them when i get home from work many times
