My IBS is predominantly constipation but when my anxiety ramps up - it goes the other way, and like you I am waking up and needing to go, but that's it for the day. Hasn't always been this way - other times I have gone a few times a day. To be honest, waking up and needing a poo used to be norm for me - going back many years. I wouldn't be able to go back to sleep because I would have that 'ya need to go poo' feeling, You know?
P.S your body will react more sensitively to the release of cortisol (this happens naturally and to everybody) but with non-anxious people, it's a gradual process over a few hours. With the sensitised system - it can be, you wake up and you're in dire need of a poo'.
